La Granja embraces the Mediterranean diet not just as a culinary mode but as a lifestyle. It’s the food. It’s the rituals. It’s getting fresh air, sunshine and the right kind of exercise. It’s the whole approach—beginning, of course, with the soil. A vast assortment of farm-grown fruit and vegetable varieties make their way to the kitchen, where chef José Catrimán prepares a delicious menu of healthy, fresh slow food for the communal table. A lifelong proponent of simple, farm-to-table cuisine, José began cooking at a very young age in his mother’s kitchen. As La Granja’s kitchen master, José works in close collaboration with Andy the farmer, as well as with small producers from Ibiza and greater Spain.

Sharing is a central tenet of chef José’s cooking philosophy. Meals at La Granja are served family style at large communal tables, where guests can enjoy the farm’s bounty in communion. This preserves the integrity of the ingredients and provides greater flexibility, allowing guests to build their own plates according to taste. Of course it also brings people together, which José believes is a central component of the best culinary traditions.

The Bar

 

Situated inside the base of an old-growth carob tree, La Granja’s Bar features a carefully curated selection of cocktails based around his beloved mezcal—the drink of Mexican farmers made from the magical agave plant. In addition to mezcal, the Bar serves organic wines and a limited selection of other high-quality spirits. But more important are the connections forged here, the experiences shared and the cultivation of good times for all.

Aqua Monaco supplies La Granja’s kitchen and bar with all-natural tonics and sodas made from mineral water with no artificial sweeteners, flavorings or preservatives. The Munich-based drink maker’s high-quality offerings range from the Hot Monaco, a ginger beer made with cold-pressed ginger root, to the Green Monaco, the world’s first organic herbal tonic water made without any quinine.
